Spinach and Turkey Bacon Sala
If you’re a low carb salad lover, this Spinach & Turkey Bacon Salad recipe is for you. It comes packed with flavor and is ready in 15 minutes!

Total Time – 15 Minutes
Serving Size – 4 Servings

Ingredients
6 slices JENNIE-O® Turkey Bacon, cut into pieces
1/4 cup diced red onion
1 1/2 – cups sliced fresh mushrooms
2 (10-ounce) packages fresh spinach (washed, dried and stems trimmed)
2 tablespoons olive oil
1 tablespoon sugar
2 tablespoons cider vinegar

Directions
1) Heat skillet over medium-high heat; spray with cooking spray. Cook bacon, onion and mushrooms 5 to 7 minutes or until bacon is crispy and vegetables are tender.

2) Always cook to well-done, 165°F. as measured by a meat thermometer.

3) Toss spinach, bacon, onion and mushrooms in bowl. In small bowl, whisk olive oil, sugar and vinegar. Drizzle dressing over salad; toss to coat.
